Star Fleet does seem to have a rather pronounced fashion sense, for a
military organization. They change colors, they change uniform designs.
They even chop and channel their ships.
Yes, CREW* will reflect this.
*Or whatever it's called.

I'll say!
In TOS, the Enterprise bridge had three distinct looks (in the two pilots and the series proper, not to mention various little changes made throughout the series). Other locations were also heavily altered (or replaced), such as the Captain's Quarters, Briefing Room, Engineering, etc.
The "chopped and channeled" bridge of the movies also changed quite a bit. Between ST: TMP and TWOK, consoles were moved around and details/colors changed. There were also some minor changes in-between TWOK and TSFS. Several other interior sets were also revised.
The Enterprise-A bridge was radically different in each film it appeared in (...even the turbolift locations moved--did the engineering team rip out and relocate the shafts, too?). This led to the notion of starships having "bridge modules" that could be removed and replaced easily.
Also, many of the other Enterprise-A interiors suspiciously resemble those of the Enterprise-D...

I have that album. It's cool in a weird way. The April drawing looks great. Has a bit of the Kirk look to him, but with bushier eyebrows. I'm looking forward to this series.

I don't think I much want to mess with April. It's all fanfic, sure, which
means I am not in any way bound by what may or may not have "gone
before" -- but there are too many people who don't fully grasp the fanfic
aspect, who think everything must be canonical (unless they don't like it!)
and who have built up solid frameworks for the life of Robert April which
they would expect to see properly served.
In CREW, when he appears, April will be the lofty and distant "Old Man" (not
in terms of age) not someone my characters hang around with.

It's certainly how it would be in a real on board ship situation, the regular crew doesn't spend a whole lot of time hanging around the bridge gossiping with the skipper. You'll notice that in TOS that Kirk really only hangs out with the senior officers when he does have some down time. On our ferry boat and all boats in general, the Master is know as the Old Man. Except for Capt. Betsy, we call her Captain Janeway.

Even as a (pretty naive) teenager, I was bothered a little bit by the way the
landing parties were almost always composed of the Bridge crew and a guest
star or two. Aside from the odd notion of the top ranking officers constantly
throwing themselves into the thick of danger, there was the matter of who
the heck was driving the boat!

It's all down to we're paying these guys a lot of money and they better be in most of the scenes. Not a very realistic scenario, but I think your idea of Crew is great. You'll be able to explore things a more realistic fashion. Plus, you're not going to bust the budget if April isn't in every scene!

Also, we knew the Bridge Crew wasn't going to die*; not so sure if the landing party is ALL "red shirts".
*Okay, I have to admit that when I first saw Trek, I was never conscious of this; the story pulled me into it and I didn't overthink it. It's only apparent in retrospect.

There should be a mini-series which reveals how guys like Kyle, Leslie, and Hadley spend their time on the bridge while the senior staff is down on a planet.
