Why can my iPhone block cookies and other such website data, but my iMac can't?

Am I doing something wrong, or is my iPhone just lying to me?

I apologise in advance if this doesn't work, but if you go to "Preferences", there should be an option to "Always block" cookies and website data. I hope it works; if not, someone else may have an idea.

On my PC browser (Firefox) I remember going into options and security and checking various boxes to not allow and destroy various kinds of cookies, no third party, no cross migration, delete flash cookies on browser exit, and that there was a way to list exceptions by their addresses. I routinely see it telling me how it just blocked or destroyed cookies from various sites. I just looked and it was under 'better privacy' which I added under 'customize'.

Also something called 'Self-Destructing Cookies' I added to Firefox a couple of years ago "Gets rid of a site's cookies and LocalStorage as soon as you close its tabs. Protects against trackers and zombie-cookies. Trustworthy services can be whitelisted."

Safari has a "New Private Window" that is supposed to block out cookies, popups, and other things.

"When you use Private Browsing windows, Safari doesn’t save your browsing history, and it asks websites you visit not to track you."

I use Safari, and have clicked all the appropriate buttons and boxes to little effect. I also use Ghostery. But my impression is that asking websites not to track me is like asking a rabid dog not to bite me.
