Your most coveted Collected Edition(s)? It can by anything from Trade Paperback, Treasury, 80 page/100 Page Giants, Omnibus, etc. Any format where a collection of stories are collected. List as many as you want, provide pictures if possible, but not necessary.
My favorite Collected Edition is "Batman from the 30's to the 70's" Hardcover from 1971. It contains color & B&W reprints. The picture below is of the actual book that I own.

I have that Batman book, and the companion Superman volume. Although I was disappointed that there was not more text on the history of the characters, it was fun to see those stories. Plus, the books came along at a very important point in the early days of my career. Of course, as many here know, my introduction to the characters in printed form was black and white hardcover collections published in England when I was a child.

Amazingly there is not a single Catwoman story in this volume, which I find disappointing.:(

Wow! I did not know about that collection of "The Monster Society of Evil"! And checking eBay, it's very pricey to get these days! I don't know how I missed it when it first was published.
My own most coveted? The one that started it all for comic book collections, and for books about comic book history: "The Great Comic Book Heroes" by Jules Fieffer (1965).

Well, you said "list as many as you want," so here would be my Top Three "Most Coveted" (no particular order and for different reasons):
Captain America: War and Remembrance signed by JB, Roger Stern and Joe Rubenstein
(Coveted more for the signatures than the material, but I do love that material.)
The aforementioned Monster Society of Evil book. It took years to find once I'd learned of its existence but I got lucky and the guy selling it negotiated himself down a third of the price, which was nice. :-)
The first Smithsonian Book of Comic Book Comics
My Grandmother gave this to me when I was really young (one of those books I barely remember not having) and it was how I got to see those first Superman and Batman stories (thanks to DC Archives for giving me a change to get the resolution to the cliffhanger :-) ), plus an introduction to the world of comics beyond super-heroes (Eisner, Barks, Kurtzman, etc.), most of which I was too young and foolish to properly appreciate at the time. I've gotten better since then.

...and why doesn't DC put out a new edition of THE MONSTER SOCIETY OF EVIL again? It's obviously in high demand. You'd think they'd want money.

DC had solicited a new version several years ago but it got cancelled. Rumor had it was due to certain, um, unenlightened portrayals of minorities.
That said, the story's in the public domain so there have been other editions put out:
