A Stephen King novel was really good - "11-22-63." It's an intriguing time travel story, with information about JFK and the era. I enjoyed it a lot - even as fiction and not reference.
Another speculative book is "If Kennedy Lived" by Jeff Greenfield. It covers the first and second terms of a presidency that went eight years.
And for fun in a variety of ways, I recommend the anthology "Alternate Kennedys." edited by Mike Resnick. The stories go literally from the sublime to the ridiculous, but I felt good that they presented real information in the fictional venue. (Mr. Resnick has done several "alternate" anthologies, including "Alternate Presidents" and "The Other Teddy Roosevelts", both of which I highly recommend.)
